Exceptional Dom Pérignon bottles at Plaza Athénée

For three years, the bar at the Plaza Athénée will host a world-exclusive cellar containing sixty or so rare Dom Pérignon champagnes. A showcase within a showcase, the glass cellar is designed by specialist Nicolas Francart to admire and taste the best of the famous champagne house’s vintages, some only available here. At the palace hotel’s bar on avenue Montaigne, time is divided into three Dom Pérignon “Plénitudes” or maturation phases: Vintage, which promises completeness and harmony (2003, 2004, 2005 and 2006), P2, a more intense and vibrant champagne, with all bottles at least 16 years old (1995, 1996, 1998 and 2000), and P3, which has a complex palate reached after more than 25 years (1966 to 1983). Given the very limited number of certain vintages, the selection is likely to change over the months.
