Carbón restaurant Paris

The restaurant Carbón hasn’t had a dull moment since it opened in late July, tucked away on Rue Charlot, a quiet off-street in the bustling Marais district. Sabrina Goldin and Stéphane Abby, partners in life and at work, quickly succeeded in drawing a mixed crowd ranging from hip twenty-somethings to neighborhood locals, thanks to an innovative shared-plate concept and an excellent selection of products beautifully cooked over a flame by chef David Kjellstenius.

Special attention was also paid to the decor. The dining room boasts a clever mix of plants and raw materials – wood and cut stone – the ideal setting to enjoy an excellent burrata smoked over beechwood (€10), a pigeon and duck parfait with cognac (€7), flame-broiled carrots accompanied with a spicy honey sauce (€9), an Aubrac rib-eye (€60) or a whole blue lobster (€70), before tucking into the bread pudding, whipped cream and plum jam (8) or the chocolate ganache with Port wine beetroot and marjoram meringue. (€8).

Sommelière Waiata Kalma-de Jong has a fine selection of natural wines, and the cocktails on tap, primarily made with bitters, are a pleasant change. And the icing on the cake? A private dining room with a gigantic mirror can accommodate 8 to 12 people, and the speakeasy-style cocktail bar in the basement is the perfect place to keep the party going with original creations by Sebastian Gans and Thomas Girard.
