A new chef at Le Pré Verre, but the same hip spirit in the kitchens

It could not have been an easy task to take over from the Delacourcelle brothers, the duo of brilliant chefs, restaurant managers and pioneers of fusion cuisine who opened this bistro in 2003. However, that does not seem to have intimidated Jean-François Paris, the new owner, who has adeptly maintained the basic values behind the establishment’s success. The new décor is true to the place’s original bistro feel, so popular among Parisians and tourists with its unfussy approach, large fresco paying tribute to Jacques Prévert and splendid terrace next to the restaurant. The same chic spirit reigns in the kitchens where Benjamin Lubin – a young, talented cook who learned his art at the stoves of Cyril Lignac and Guy Martin – keeps alive the bistro’s gourmet flame with a zeitgeist cuisine that uses organic produce wherever possible, often highlighted with exotic flavors. Naturally, the menu still includes Le Pré Verre’s iconic dishes, but its choices are updated according to the market and season. For instance, with an innovative stewed octopus salad (€10)… although it would have been even more delicious with a spicier stock! However, we have no such reservations about the tender beef marinated in yuzu and soya, served in thin slices with bone marrow and pureed potatoes livened up with mustard seed (€23), or the dessert: a delightful pan of cherries and chocolate mousse (€10). There is something for every customer, given that most of the menu dishes are available as part of the splendid €33 set menu or the €26 option. Another set menu is available for lunch or dinner from Tuesday to Thursday at €14.90, glass of wine and coffee included.
