Marjorie Fourcade is passionate about pastries, but suffers from allergies, and she spent two years talking to top pastry chefs, nutritionists and food engineers before opening her own store and tearoom – Foucade Paris – where she serves light, low-sugar homemade goodies with none of the allergens but all of the taste. We heartily recommend the 170 kcal La Citronnée, made with unblanched almond paste and three-citrus cream, La Rustique, a combination of sweet potato and caramelized apples, and L’Éclair, which is filled with praline, three-spice apples and whipped cream.
