After its outlet on rue des Saints-Pères in the 7^th arrondissement, celebrated chocolate maker Debauve & Gallais has opened a new space on boulevard Saint-Germain. Its founder, Sulpice Debauve, Louis XVI’s pharmacist, earned a reputation as the “chocolatier of kings” after creating the delicious “pistole” used by Marie-Antoinette to relieve her migraines. After teaming up with his nephew Auguste Gallais, in 1823 the pair invented low-sugar almond milk chocolate and other pastilles flavored with vanilla and orange blossom.
