Beneath the serene arcades of Place des Vosges, Pavillon de la Reine has long embodied a certain French art de vivre. At its heart, the Michelin-starred Restaurant Anne enters a new chapter led by chef Thibault Sombardier, marking his return to high gastronomy.

After years spent exploring other culinary forms, Sombardier returns to what he loves most: honest, crystal-clear cuisine where technique serves the product, not the reverse. With his trusted executive chef Matthieu Pirola, he crafts a thoughtful, balanced menu that celebrates seasonality and precision. Dishes include amberjack crudo with yuzu, roasted porcini mushrooms with escargots, milk-fed veal with fine herbs… A cuisine without artifice – rooted in French tradition yet uplifted by contemporary touches.

Beneath their apparent simplicity lies meticulous craft: a perfectly reduced jus, a brightening acidity, a flawless cuisson. Pure delight. To accompany this culinary renewal, architect Didier Benderli redesigned the dining room as an homage to the Queen for whom the hotel is named: understated woodwork, pearl-like lighting, pink Paulin seating, raku-ceramic tables, and a sun-lit tapestry create a cocoon of quiet luxury.

With only twenty seats, the restaurant feels like a hidden salon away from the city’s frenzy. An iconic house of the Chevalier Paris group, Pavillon de la Reine maintains its vision of intimate, human, timeless hospitality.
