C’est du tout cuit pour cette cuisine crue

Bolstered by the success of Will, their gastronomic bistro on rue Crozatier, Marie and William Pradeleix opened a raw food location at the heart of the Marais district. The bright and cozy dining room is decorated by Marie in a sophisticated, streamlined style, with walls, bench seating and comfortable chairs in varying tones of slate grey. A warm and inviting atmosphere, perfect for intimate meals. But foodies will undoubtedly rather wait for a spot at the counter, to watch Luca D’Alessandro, a Sicilian from Catania, artfully prepare plates in mini portions and to share, based on William’s ideas. A tribute to his roots as a native Basque, revisited here in a fresh and creative version and placed in the center of the table for guests to dip into as they please. But the problem is, since everything is so good, you might not want to share the excellent Tahitian-style albacore tuna tartar with cucumber, pepper, coconut milk and lime (€14.50), the delicate carpaccio of Saint-Gilles-Croix-de-Vie sea bream with fennel, marinated pink grapefruit and citron (€12.50), the exceptional smoked eel glazed with red beetroot, chilled raspberry and black sesame emulsion (€14) or the superb Charolais beef tartar with soy vinaigrette, truffle cream and green mango (€12.50). Desserts at €9. Plan on 3 to 5 plates per person, depending on your appetite. Lovely selection of wines (mainly organic) at attractive prices (starting at €5.50 for 12cl and €28 for a bottle). Delightful service.
