Steps from the Saint-Germain market, at the Mabillon crossroads, Brass reinvents the Parisian brasserie with a fresh note of elegance.

Designed by Dorothée Meilichzon, the interior is a study in refinement: mosaic floors, plush velvet, rich caramel-toned woodwork, a central bar, and even a piano. A single disruptive accent – the metal ceiling imported from New York – contrasts with the otherwise classic brasserie décor.

The spirit of Brass is driven by a passionate team: visionnaire Mathieu Bucher, with Franck Saliba, François Dulsan, and Thomas Fougerol by his side. The menu revisits French staples – onion soup gratinée, escargots, asparagus with mousseline sauce – while introducing modern twists like sea bass tartare with lobster, a reinvented croque-monsieur, and an American-style L-bone steak. Desserts, from made-to-order chocolate soufflé to delicate fruit creations, ensure a sweet finish. With eighty French wine references spanning renowned crus and hidden treasures, the cellar is thoughtful without ostentation. Prices remain refreshingly approachable, with starters from €9 and mains beginning at €19.
