Vesper
At the foot of the École Militaire, Vesper begins a new chapter – and instantly asserts itself as the most glamorous address on the Left Bank. The third jewel of the Fitz Group, following Fitzgerald and Abstinence, the space has been reinvented under chef Roudy Petersen, who offers a bold, refined vision of the contemporary izakaya.
Imagined by Guillaume Bénard – head of the dynamic Fitz Group (also behind La Fontaine Gaillon and Hollywood Savoy) – Vesper keeps its elegant, festive spirit while embracing a distinctly Japanese culinary identity. Chef Petersen, trained by Guy Savoy and Pierre Gagnaire and former executive chef at Zuma Europe after stints in Doha, Abu Dhabi, and the Louvre Abu Dhabi, expresses experience and emotion in each dish. From the first bites, technique speaks: crispy rice topped with tuna-and-salmon tartare enhanced with shiso and wasabi; molten black-cod-and-sweet-potato croquettes; airy rock shrimp wrapped in shiso with bright yuzu. Among the shareable dishes, miso-caramelized black cod revisits a classic with polished intensity, while Iberian pork with yuzu kosho and truffle sauce blends Japanese precision with French indulgence. Sides like miso eggplant and grilled broccolini in spicy sauce showcase a reimagined Japan full of finesse. Desserts – matcha cheesecake, chocolate fondant with mandarin coulis – confirm that indulgence knows no borders.
