Awarded three Michelin stars, fives Toques from Gault Millau and three dinner plates from Pudlowski, talented chef Guy Savoy leads the hit parade of all the guides with clout. But that hasn’t prevented him from rising to a new challenge: transferring his gourmet restaurant from rue Troyon to the Hôtel de la Monnaie on the quays of the Left Bank. We were among the first to discover the Guy Savoy version 2015… and we were immediately smitten with the decor by Jean-Michel Wilmotte, who created a majestic setting in dark taupe tones and walls adorned with mirrors and genuine works of art. For our first meal, we wanted to renew with the great Guy Savoy classics, like his sumptuous artichoke and black truffle soup accompanied by a flaky brioche with mushrooms and truffles (€92), followed by the exceptional crispy sea bass with delicate spices (€110), and his signature made-to-order vanilla millefeuille (€42): a food-lover’s paradise! Tack on the remarkable food and wine pairings by the skilled sommelier Sylvain Nicolas, along with the pleasure of service that is efficient and courteous without being stuffy, and we had only one desire: to hurry back and taste the Guy Savoy’s latest creations.
