Following his notable beginnings at the former Israeli restaurant Shouk, Chef Ohad Amzallag unveils his inaugural Parisian venture, echoing the spirit of his Tel Aviv establishment. As you enter, a long, tall marble table surrounded by tall leather chairs invites social dining and sharing. Towards the back of this elongated room reveals a secondary space showcasing the Chef’s table: a five-seat counter facing the open kitchen. This setup offers a live view of the brigade meticulously crafting dishes predominantly inspired by marine ingredients, drawing from a culinary repertoire ranging from Levantine cuisine to Eastern European influences, all the way to the Arabian Peninsula. This gastronomic journey is presented as a unique tasting menu priced at €97. Starters include an oyster cream delicately heightened by a mint granita and spicy koshu gel. This serves as a delightful preamble leading to an inventive tuna tartare, nestled atop a thick brioche base and elevated by a truffle shave and a whipped tahini with mustard seed and lime. This is followed by an exquisite lobster medallion atop ricotta-filled agnolotti, sage cream, and lemon. This meal was flawlessly executed and culminated with a creamy cheesecake. An inviting spot that’s a must-visit.
