Cèna: the gem of the 8th arrondissement
Known for his restaurants Les Racines and Le Bon Saint Pourçain, David Lanher, had unveiled Cèna two years ago, always faithful to the spirit that has animated it since its beginnings. The opening of Cèna was born of a particular desire to offer a unique experience. Studio Magalie Varcourt staged it with precious wooden tables arranged around a leather bench, large mirrors and luminous sconces reminiscent of the 1920s. For the past few months, a major – and modest – figure of the young Japanese generation, Hideki Nakamura, has presided over Cèna’s destiny in this discreet Treilhard Street, just a stone’s throw from Monceau Park. Hideki Nakamura is one of those chefs happy to be present behind their stoves, studious in the design of each of the dishes, especially concerned about the pleasure of its audience. This is why he builds a card and a healthy menu that aim for a perfect balance. We find the richness of French gastronomy and Japanese technicality in its cooking and the training of its dishes. Everything amazes and seduces like crayfish, horseradish cream, strawberry, mint or this melting guinea fowl, white asparagus, morels or this rhubarb dessert, vanilla, elderberry flower. After such a meal, where the kitchen is mastered from beginning to end, we have the certainty that the chef has everything to get a first star.
