Billie

Paris has a new address where it is worth lingering. Billie is the kind of place that had been missing – a restaurant that embraces both its musical identity and its culinary ambition. Behind the project are two partners: César Gourdou, also behind Colonia – one of the capital’s most popular cocktail bars – and Nicolas Saltiel, founder of the Chapitre Six hospitality group. Together, they have created a venue that reflects them: refined, welcoming, and unpretentious. The concept is a hi-fidelity bistro. Candles on tablecloths, soft lighting, vinyl records playing…

In the evening, the atmosphere intensifies with a custom sound system designed like a professional recording studio by Palladium Audio and artisan William Ménard, after four months of work. Funk, soul, jazz, and old-school hip-hop set the tone. The music program is curated by DJ Reason, based in New York, drawing from a carefully sourced record collection.

In the kitchen, Cynthia Frebour offers a Mediterranean-inspired menu designed for all appetites: hanger steak with its signature sauce, highly addictive linguine limone e pepe, crispy quinoa with kale and avocado… To finish, a crumble-tatin with whipped cream that is already becoming a signature. At lunch, a seasonal weekly menu complements the offering.

At Billie, attention to detail extends from the plate to the sound. A dinner that naturally leads to wanting to return.
