Solaria’s winning combination: pâtisserie and tea room

At Solaria, I’m the pastry chef, sales associate and barista all at once. Because above all, this place is an extension of who I am.” That is how Jeanne Dufossé describes her dream turned reality. Trained in the pursuit of excellence, precision and an unwavering attention to detail at prestigious establishments such as Le Meurice and the Plaza Athénée, following her studies at Ferrandi, Jeanne Dufossé has now struck out on her own with Solaria on Rue Saint-Honoré. Here, she puts a refined spin on desserts rooted in the great French pastry tradition – Black Forest cake, vanilla-caramel Saint-Honoré, chocolate flan – and evolves her menu with the seasons. Her creations can be enjoyed at home or on-site, in a space with two distinct atmospheres: one area with tables and chairs, ideal for meetings, and another with armchairs and low seating made for lingering a little longer. After making the difficult choice of which pastry to order, guests can pair it with a specialty coffee, matcha, another hot drink or a house-made smoothie. At lunchtime, Solaria serves salads, quiches or a bun… with dessert, of course.
