In the kitchen, chef Grant Waller continues the Taillevent legacy with remarkable finesse. Having trained in some of Paris’s finest kitchens and worked closely alongside Alain Solivérès for many years, he delivers a deeply French cuisine that feels generous, precise and luminous.
From beginning to end, the meal impresses through its sense of balance. Cooking is flawless, sauces restrained and elegant, portions generous without heaviness. The poultry pie with morels, vin jaune and foie gras is unforgettable, as are the semi-cured salmon aio li-style and the shoulder of lamb stuffed with seasonal vegetables. Desserts prolong the same sense of comforting sophistication. Particular mention goes to the Saint-Honoré – both featherlight and deeply indulgent – alongside the floating island and chocolate mousse, executed with perfect restraint.
