Former chef at Hôtel Raphaël, Francisco Merino, a brilliant cook from Burgos in Castile, has worked alongside Michelin starred chefs like Hélène Darroze, Éric Frechon, and Éric Briffard. Today, he has created a culinary haven, offering refined French cuisine with Mediterranean nuances. His restaurant, an intimate and almost secretive space with just 12 tables, is beautifully designed by interior architecture studio Paulimar. Behind the curtain of the entrance, an open kitchen reveals Francisco Merino at work. The dining room charms with its lovely parquet floors, olive green walls, comfortable armchairs, and elegantly draped tables. It’s a soothing setting that enhances the chef’s delicate and flavorful specialties, which make up the tasting menu such as the delicate summer vegetable blanquette, herb and flower salad, the succulent sea bass with a trio of cauliflowers in a coconut milk cappuccino, a lovely Iberian pork tenderloin with black garlic jus, and finally a case of ethereal meringue with raspberries dressed in vinaigrette.
