South American flavours at Selva

Pisco sour cocktail, ceviche, chimichuri sauce, nikkei… South American cuisine is the stars in Paris! When Guillaume Pierrat, ex-executive in large French companies, decides to launch himself in the restoration he opts for a menu of a bistronomy of Peruvian and Colombian inspiration. So that everything is in unison, the setting of his restaurant, decorated with a beautiful corner terrace with a view of the Cluny museum, puts on the same note. Mission perfectly fulfilled, with a warm and colorful decoration, enhanced by some evocative woodwork of the former Inca empire. All it takes to spend a pleasant moment, while enjoying the cuisine of Colombian chef Felipe Camargo who is not lacking in talent. The latter has delighted us with his clasico ceviche (16 €), perfect to wait without impatience, the superb and tender 30-day mature beef rib (90 € for 2) cooked to perfection in a braise oven, and served with a fantastic chimichurri nikkei sauce and also delicious large fries. A great gourmet moment, and surely one of the best beef ribs in Paris! The rib of the Cantal pig with criolla/pineapple sauce (€28) or the octopus with braise sauce anticuchera (€25) also deserve a second visit… Little choice at dessert time, but chocolate/coconut (€10) allows gourmets to finish on a sweet note.
