Under the glass canopy of Hôtel Le Jardin de Verre by Locke, Bibie has established itself as one of the most sought-after addresses on the Left Bank. Created by the Coolangatta group – behind Loulou, Judy, Georgette, Tiger, and Fitzroy – the venue reflects a contemporary, carefully balanced aesthetic. Natural light, generous volumes, and controlled greenery define the space, which attracts a varied clientele. The atmosphere remains fluid throughout the day, supported by attentive service with subtle Australian influences. At lunch, the mood is calm and relaxed. In the evening, lighting softens and the room becomes more animated, particularly on weekends when DJ sets draw a lively Parisian crowd. The menu is precise and well-executed. Silver trout carpaccio, enhanced with a house-made bergamot and lemon balm ponzu, opens the meal. Smoked free-range guinea fowl, served with roasted jus and salsa verde, follows. The Mont Blanc soufflé with chestnut and blackcurrant provides a rich and comforting finish. The experience continues with a drink. The wine list features more than 200 references, largely natural, organic, or biodynamic, while the cocktails highlight lesser-known French distilleries with a restrained approach. On weekends, brunch (€49) attracts a clientele looking for a balance of ease and refinement. Lunch set menu €25.
