Saku

Near Place Vendôme, Saku marks the arrival of a new Japanese restaurant in a neighborhood that certainly has no shortage of them. Saku offers a new interpretation, somewhere between a sushi-ya and an izakaya. From the moment you step inside, the atmosphere sets the tone: deep red recalling Japanese lacquer, wood throughout, subdued lighting and, underfoot, a custom- designed carpet by Japanese designer Keisuke Shoda. The large dining room retains a genuine sense of intimacy, while a private room and an eight-seat counter offer very different ways to experience Saku.

Black cod korokke, Quiberon oysters with ponzu, miso-glazed eggplant, tempura and teriyaki salmon share the menu with sashimi, chirashi and sushi, as well as more prized ingredients such as A5 wagyu from Kagoshima. It is Japanese cuisine that is approachable and generous, yet becomes more ceremonial when you take a seat at the counter.

Trained in the Edomae tradition, sushi master Victor Emmanuel approaches fish aging, the precision of each cut and the balance of the rice with distinctly Japanese rigor. Alongside him, Chef Ando brings more than twenty years of experience. Together, they orchestrate a seasonal eight-course omakase (€145) at 7pm. and 9pm, by reservation.

Saku thus brings together two sides of Japanese dining: the convivial spirit of the izakaya and the ceremonial precision of the sushi-ya.
