The secret garden of Shangri-La Paris

Shangri-La Paris continues to reinvent itself. Just steps from Avenue d’Iéna, behind the noble façade of the former private mansion of Prince Roland Bonaparte, the Parisian palace unveils Maison Roland, a new table set in the heart of its garden. A singular address, like a discreet breath of fresh air in the very chic 16th arrondissement, where Paris suddenly seems to slow down, sheltered from the city’s bustle.

The setting has everything that makes great Parisian houses so precious: history, décor, and natural elegance. Once the residence of Roland Bonaparte, Napoleon’s own great-nephew, Shangri-La Paris has, since its opening, cultivated an art of hospitality where Asian graciousness meets the French art de vivre.

Maison Roland follows in that lineage, with a simpler, more relaxed, almost summery ambition – while remaining unmistakably chic. Guests come first for the setting. White tablecloths, Gien porcelain, silverware, and light filtered through the leaves compose a very Parisian scene. From the garden, the Eiffel Tower appears in the distance, as a reminder that one is indeed at the heart of a heightened Paris.

The cuisine extends that atmosphere. Maison Roland is not chasing trends, nor trying to make a statement. Deviled eggs with salmon roe, sardine rillettes, country terrine with pistachios and foie gras, frisée salad with lardons, Brittany oysters, sole à la grenobloise, beef onglet with pepper sauce, tartare, grilled sea bass, or lobster served Thermidor-style, grilled with lemon, or cold with mayonnaise: the menu plays to the most reassuring side of French tradition. The products are well chosen, the cooking precise, the plates straightforward and generous. Desserts follow the same spirit, from the signature île flottante to chocolate mousse and Madagascar vanilla crème caramel. Service has the easy precision expected of a palace, attentive without ever feeling formal.

One lunches in the calm, dines in the softness of the garden, and lets the moment linger, as if Paris had briefly suspended its pace.
