Dragon Hand Roll Bar
On Rue du Dragon, Cyril Lignac is extending his Saint-Germain footprint. The chef, already a fixture on the street with Bar des Prés and Aux Prés, has transformed his Dragon restaurant into a counter devoted to the hand roll, the hand-rolled maki born of Japanese street food. The format is fresh, direct and made for sharing, with everything prepared to order. It may seem simple, but every detail counts: a sheet of nori that stays crisp, warm and tender rice, precisely cut fish and a sauce applied with just the right restraint.
Around the hand rolls, the menu moves through flame-seared crudos, crispy sushi and beef gyoza before a few sweet finishes – ice cream mochi, vanilla-praline monaka and chocolate fondant. Diners can build their meal à la carte or head straight for the three- to six-hand-roll menus (€19 to €45), ranging from a salmon-and-bluefin-tuna duo to a black cod, sea bream and shrimp selection. Nicely calibrated for a quick lunch or a dinner that stretches into the evening.
On the design front, an oak counter dominates the room, complemented by leather banquettes, printed wall fabrics, hand-painted sheers and watchful maneki-neko: the energy of street food filtered through the polished elegance of Saint-Germain-des-Prés.
Drinks-wise, cocktails arrive bottled, portable and cleverly put together. Japanese sake and whiskies, including Nikka and Hibiki, round things out, alongside Asahi beer and a concise tea selection.
