La Chambre Bleue : the new gastronomic jewel signed by Dani Garcia
Lovers of Spanish gastronomy and fine gourmets are delighted with the opening of Dani Garcia’s restaurant in France: La Chambre Bleue. In the heart of the Maison Delano Paris Hotel (formerly the Buddha-Bar Hotel), this restaurant is the fruit of the collaboration between the Andalusian Michelin-starred chef and the Spanish architectural agency Lázaro Rosa Violán Studio. With 170 seats, La Chambre Bleue marks a new stage in Dani Garcia’s international expansion. The design reflects the Andalusian and Mediterranean spirit of the table, while respecting the original architecture of the Parisian mansion. The open kitchens, with their fresh fish stall and imposing cooking burners, are decorated with a ceramic fresco with cubist accents by ArtAntic L’Alcora. In the dining room, the custom-made furniture responds to the fabric that appears on the panelled walls, specially designed for the restaurant. The bar is also decorated with azulejos ArtAntic L’Alcora in harmony with the Lucien Gau luminaires, for an eclectic and contemporary result. Chef Dani Garcia offers an authentic and festive gastronomic experience, with a series of appetizers ranging from oysters to Iberian ham from bellota to fish such as sardines, anchovies and fried squid. The main dishes are a tribute to Spanish cuisine, with delicious paellas (among the best in Paris), octopus, txuleta, chicken and oven-baked bar, as well as Mediterranean references. For lovers of bluefin tuna, a section is dedicated to this marine delicacy, with a trio of tartares, the ventrèche and the morrillo, or croquettes… The wine list is at the height of the dishes offered, with a selection of the most beautiful wine regions, great vintages, to choose with the sommelier in the open cellar. The cocktail menu draws its inspiration from the work of Picasso, whose ten paintings from his Blue Period give their name to the house creations. The restaurant’s beautiful tree-lined patio will undoubtedly be the new summer hot spot in Paris. _ PATIO
