After Pristine, their natural wine bistro in the 9th arrondissement, Michelle Primc and Jérémy Grosdidier open Vivide, a 100% plant-based gastronomic restaurant – never boring – nestled on the heights of Montmartre. Here, no ultra-processed substitutes or militant discourse, but a cuisine that simply places the vegetable at the center, crafted with precision, intuition, and freedom. The six-course tasting menu changes daily and showcases techniques ranging from fermentation to smoking and charcoal-oven cooking. The meal begins with a surprising “vegetable picnic,” followed by dishes such as ember-roasted beetroot with ginger, clementine, and tarragon; salted hazelnut tart with yeast molasses and onion jus; and smoked butternut with miso and sesame, playing with depth, freshness, and texture. Designed by the founders, the dining room blends vintage furniture, concrete tables, handmade ceramics, and coffee-ground textured walls, creating a warm, understated atmosphere. The open kitchen fosters a natural dialogue with the brigade. The wine list highlights French biodynamic and natural wines chosen to complement, never overpower, the cuisine.
