Auberge du Jeu de Paume Gourmet stopover in Chantilly
Less than an hour from Paris, Chantilly offers an enchanted interlude to Parisians who wish to escape the frenzy of the capital for a few days. A member of the prestigious Relais & Châteaux, the Auberge du Jeu de Paume offers a full range of upscale services to meet the expectations of a demanding clientele. In this 5-star hotel, gastronomy is available in two impeccably maintained restaurants. First of all, La Table du Connétable, a Michelin-starred restaurant where you can discover a menu in three or five courses. In a bourgeois setting, the talented chef Anthony Denon, who left for the Burgundy Hotel in early 2022, has left his place to Clément Le Norcy, an equally talented chef who supervised the gastronomic restaurant Le Joy at Fouquet’s Paris. Originally from Chantilly, he is opening a new and very successful culinary score. A return to his roots for Clément Le Norcy, who is now returning to this establishment where he had worked alongside Arnaud Faye (currently chef of La Chèvre d’Or) who had obtained 2 Michelin stars. Respectful of short circuits, the chef calls upon the producers of the region. You can enjoy a langoustine cooked au naturel or mushrooms with Colonnata lard, followed by a magnificent monkfish just pearly. For dessert, the most daring will opt for the delicious Malt d’orge (chocolate dulcey, whiskey foam, verjuice caramel). For a less formal gastronomic experience, head to Le Jardin d’Hiver where you can enjoy a pâté en croûte, a fine eggplant pie or a very tender bourguignon with seaweed.
