Ethanol, where terroir takes center stage

Michelin-starred chef Maxime Bouttier expands his culinary universe with Ethanol, a second address located just steps from his gastronomic restaurant Géosmine on Rue de la Folie-Méricourt. Set inside a former neighborhood cobbler’s workshop, the intimate space reflects Bouttier’s passion for wine and market-driven cuisine. Named after ethanol – alcohol in its purest molecular form – the venue showcases more than 500 carefully selected wines from legendary estates including Domaine de la Romanée-Conti, Decelle in Burgundy and Italy’s Emidio Pepe, alongside artisanal liqueurs from Distillerie Cazottes. The cellar is paired with an equally refined menu of delicacies: Galician beef cecina, Pata Negra bellota ham and house-smoked bluefin tuna belly. For cheese, renowned affineuse Virginie Boularouah of Chez Virginie has curated a selection featuring crottin de Chavignol, Saint-Nectaire and Roquefort. Signature dishes such as the chef ’s Le Mans rillette croquettes and delicate accras complete the experience. Authentic, generous and deeply convivial, Ethanol celebrates craftsmanship in every form.
